Hiroaki Aoki started the first Benihana in New York based on seed money he had acquired from managing an ice cream truck. Throughout the 1960s and 1970s the chain began to grow. Today, it is best known as a popular family gathering spot for birthdays and other important occasions. It is also an important item in pop culture, appearing in many Western movies and TV shows.

It owns or franchises 116 Japanese cuisine restaurants around the world, including its flagship Benihana Teppanyaki brand, as well as the Haru (fusion cuisine) and RA Sushi restaurants. Aoki, a wrestler who had qualified for but did not attend the 1960 Summer Olympics, started the restaurant with US$10,000 earned from driving an ice cream truck in Harlem.
